Tired, can't keep eyes open. ADRENL FATIGUE?

Resolved question:
Every day between 3 and 4pm, I get so tired, I can't keep my eyes open. It's not just the average crash. I'm actively teaching at that time, standing, walking, talking, engaging with students. I've fallen asleep standing up talking to a student! I've tried everything. No rice at lunch, squats, jumping jacks, stretching, twisting my ears, coffee, RedBull....none of it has an effect. Then I'm tired the rest of the afternoon, so by the time I get home, I don't want to do anything but go to bed. I just had a physical in August, my blood work is great, my blood pressure is normal, I had a fasting blood sugar test that was fine too. I sleep at least 6 hours a night, sometimes 8 or 9. I run three miles three times a week. I've been reading a lot about adrenal fatigue and or "leaky gut" but I live in South Korea currently, and I'm not really sure where to go for testing or what to ask to test for. There are SO MANY DOCTORS. Any help you can give me would be fantastic.

I understand your concern.
Your symptoms are definitely not related to leaky gut syndrome. It is an extremely rare manifestation and is experienced by patients suffering from inflammatory bowel disease.
Since all your blood reports are normal the common reasons for such symptoms, such as Iron Deficiency Anemia, Hyperglycemia, e.t.c have been ruled out.
Since you are able to run three miles three times a week, it shows that you are physically fit too.
So in my opinion, what you're experiencing is just fatigue and you need to take a break from your schedule. You are a teacher and the job has a lot of stress and responsibilities, so it's probably taking a toll on your body. And mostly after lunch ( 2-4 pm ), everybody feels a little tired and sleepy due to the post lunch surge in glucose levels.
I can assure you, considering all your blood reports are normal, there is nothing serious.
Also have you ever gotten your thyroid values checked?

I have not had my thyroid checked that I know of. Can a general doctor do that, or do I need to go to someone specific?
I used to work for a hotel and woked a much more stressful schedule with much less sleep. I have never had the problems I'm having now. I'm literally falling asleep while standing up talking. Could there be a food sensitivity? A vitamin you would recommend? I drink at least 1.5L of water, every day, usually closer to 3. I dread the afternoons because I feel like there is nothing I can do to overcome it.

Yes it could be mostly due to the fatigue levels that you have been subjected too for long.
And regarding thyroid, you can get a reference from any local physician, and get it tested in any of the labs. If you upload the reports i can guide you if any management is requirement.
It could also indicate a vitamin b 12 deficiency. So just prophylactically you can take Tab. Neurobion Forte or any local b complex tablet that is available. It must be taken once every night.
