Resolved question:
on Friday I was diagnosed with bronchitis and was prescribed a z-pack. I finished the last dose today at 3pm. About 15 minutes after dinner which was at 6:30pm I had a bad case of diarrhea. what could it be?

The diarrhea seems unrelated to your previous history of bronchitis and the medicines you used.
Did you eat any outside food? Or any recent change in diet?
How many episodes did you have?

I did eat some grilled chicken and macaroni and cheese 15 minutes before that episode I've had no other episodes no fever today or any other symptoms and I have no past medical history

It is unrelated to your previous bronchitis.
It sounds more like acute gastroenteritis, and if there was only one episode then no further management is required.
You can take Tab. Loperamide to stop the frequency in case it happens again. However if there is development of fever then you will need antibiotics. Watch out for crampy abdominal pain, fever and increase in the frequency.
